An Introduction to Chinese Tea Ceremony (Gongfu Cha)
Gongfu Cha (工夫茶), literally “making tea with skill,” is a Chinese brewing tradition that uses a small teapot or gaiwan, a high leaf-to-water ratio, and many short infusions to reveal a tea’s full character.
The Essentials
- Gaiwan or small clay pot — keeps leaf ratio high
- Fairness pitcher (cha hai) — evens the strength across cups
- Small tasting cups — sip and savor
- A tea tray — catches rinse water
The Rhythm
- Rinse the leaves quickly with hot water (awakens the tea, discarded).
- Brew for 5–15 seconds for early infusions; lengthen over time.
- Pour into the fairness pitcher, then divide into cups.
Why It Matters
Gongfu Cha is less about formality and more about attention — to water, time and the leaf itself. It is the most rewarding way to experience fine Chinese tea.
